Wine making: Manual harvest of grape from vineyards of 60 years on average in 12kg. boxes and thermo regulated in specially designed cooling chambers during 24 hours ( 4-6 degrees) prior to fermentation. Selection of grapes on tables and then extract the must flour in a macerator rotor. This has kept with is own lees for 9 months in new barrels. It has been practiced “batonage” for more sophistication.
